AICOS - Noodle Making Machine

The AICOS-Noodle Machine is a compact, fully automatic noodle-making device specifically for udon. It supports high-hydration noodles and handles the entire process from flour weighing, salt water supply, mixing and kneading, sheeting, slitting, to boiling. It can be done automatically and quickly on a per-person basis. It features an integrated structure from flour stock to boiling, allowing for udon to be finished in about one minute.

In addition, rotary systems are used in the kneading and boiling processes to improve processing capacity. In the rolling section, the roller shape, heating, and surface treatment are designed to prevent dough from sticking, and in the cutting section, heating the blade edges prevents noodles from sticking together.
